3/4 cup white flour
3/4 cup wheat flour
2tsp baking powder
1/2 tsp salt
2 tbsp sugar
1egg
1 1/2 cup milk
2 tbsp oil
Mix all dry ingredients into a bowl. Separate the egg; beat the egg yolk with the milk Add this to dry ingredients, stirring only to blend. Add the oil. Beat the egg white until stiff and then fold this into the batter. Bake on a hot griddle with little or no oil Makes 2 dozen medium pancakes.
*Sue said you don't have to separate the egg. I did because I like to because I am weird.
*I used butter to cook mine in, because it is so good.
*These freeze great, so you can triple, or quadruple the recipe, and freeze for easy breakfasts, that you know what is in it.

Lainey's First Day of School
Lainey started school today. When Ellis started, I was calm and confident, and 37 weeks pregnant and tired. I felt assured he was in good hands, and school was just what he needed. I was okay. When Lainey started today I was 1000% sure she was in good hands, being that her teachers is Ellis' afternoon teachers. I am very familiar with the program, and love it.
It was not easy. Then I drove by the hospital that I birthed my babies in running some errands, which is in the middle of demolition. Then I went to observe her for a minute and she was fine. Not upset at all. Ellis cried for 3 months, Lainey is happy to be at school. Not even a whimper for your Momma? I was distraught, so I went home and made pancakes, lots of pancakes. And made a big mess. So then I cleaned. Anything to preoccupy myself. I also talked to Mimi on the phone while I "pancaked" it up.
Oh I missed Sis. I really liked just me and Ellis hanging, although to keep composure I cooked a ton of pancakes, but I missed Sis. She is my hip monkey. She was happy to see me when I picked her up. Then she fell asleep and is still asleep. That is all, except that my baby now goes to school. Thank you.

The Vexing Questions of Motherhood #2
Why is it that out of the blue, my son's favorite dinner pastime is burping?

- He did it one night while I was at work and Brian cracked up, thus reinforcing the yucko behavior.
- As mentioned in other question, did he get accepted into man camp early, thus learning how to make disgusting noises at the dinner table and find them funny?
- He has somehow developed severe reflux.
- He loves to torture his beloved mother.
Memorial Day Weekend Fun
We had such a nice weekend. The weather was nice, and after all the cold this last year, we really didn't mind the heat.
First things first we hit up the pool twice. I already used this picture, but I love my stylish pool kids. Dorky chic is totally in. Do you watch Jerseylicious?
Sunday we hung out, then I went to work for a little bit, and Brian took the kids to see Grandy, and go to a baseball game. Lainey's first baseball game in fact. Let me now give my husband props. He loves taking the kids places by himself, actually thought about taking them to the game, and survived. It was super hot, Lainey had a tantrum, and it was not so close to home. The kid had fun, but due to Lainey's meltdown, they only lasted 5 innings.
On Monday we met friends at Cheekwood Botanical Gardens. It was a free community day, of course, I don't know if we Strieplings roll any other way. We saw the trains, walked and visited different areas in the garden, and checked out the art museum. Then we all went to eat lunch at a Mexican restaurant. It was a lot of fun. We are really excited to go back to Cheekwood soon, the next free day that is :).

For dinner we made pizza together, and my camera's battery died, so we don't have any pics. Ellis ate 4 pieces, and Brian's grand total is a mystery. Lainey hardly ate but that was really due to her not having a good nap, and consequently she is in bed an hour early. (She starts school tomorrow anyway, *tear*) So I guess my first attempt at homemade pizza was a success. I already have it in my head how I will make the dough better next time :)
Now I would like to say thank you to all of those that have sacrificed their lives, and all that could have been, for all that is for us. Our country is not perfect, but it is still good place to live, and raise a family, and speak your mind. Happy Memorial Day.

Simple Saturday: Pool Season Edition
The Striepling's took their first trip to the pool today. I had to work, but took some pics anyways, because I love my babies. Notice the matching Florida State swimsuits. Those were a purchase courtesy of B-strip.
Brian reported they had a blast, they both ate great dinners, and were both exhausted. We are hoping the semi-annual event of them sleeping until 8 occurs in the morning.
A few Saturday Morning Notes
My garden is growing. I am pretty sure it is overcrowded but it is exciting. It is my first time.
My kids were wild yesterday. In the morning Lainey had carefully combed pigtails, a cute outfit, and a clean diaper. This is her after lunch.
I went to the farmer's market yesterday. It was nice until we were leaving because Ellis had a meltdown demanding to see some animals. But I got some yummy food.
I made yogurt for the first time, and it was ready this morning. It smells yummy and we will try it at lunch.
And although I don't have pictures of the occasion this is most important:

Thankful Thursday
1. I am thankful for the sewing machine my Mimi gave me.
I know I have already featured it on a Thankful Thursday, but, I am sitting at it right now with my laptop, and a stack of recipes, pens, coupons, and paper. This 1960's piece of furniture is my new favorite thing. It is older, reminds me of Mad Men, a great laptop desk, and it makes me think of Mimi. I love it. It is my new menu planning station. I hope to soon learn how to actually sew. I doubt the Singer company at that point in time could even conceive of a laptop desk. I am thankful for it though!
